- Una ves retire los mariscos añadimos él azafrán y el arroz rectificamos la sal y dejamos reducir el caldo y bajamos el fuego (importante vigilar que no se reduzca muy rápido porque se puede ahumar)
- Después de que el caldo reduzca bajar el fuego y no mover más la paella si quieres puedes taparla o dejarla destapada una vez le falte 10 a 15 minutos de estar añadimos todos los mariscos ya hervidos sin mover nada de la paella y decoramos r
