- 400 gramos manteca de puerco o vegetal
- 400 gramos mantequilla
- 20 gramos royal
- caldo de pollo o agua necesaria
- sal molida
- 1 manojo espinacas
- 250 gramos queso oaxaca
- 2 cucharadas mantequilla
- hojas maÃz para tamal

- En una bandeja poner a remojar las hojas para tamal.
- Quitarles el tallo a las espinacas y ponerlas en una coladera.
- Poner la coladera en otro molde del mismo tamaño o más grande.
- Añadir agua y una cucharada de sal.
- Mover muy bien para que se disuelva la sal. Dejar reposar por 20 minutos.
- Retirar del agua sucia y lavar muy bien con agua. Cortar en tiras.
- En un sartén caliente añadir 2 cucharadas de mantequilla.
- Agregar las espinacas.
- Agregar un poco de sal y mover hasta que los lÃquidos se evaporen.
- Sacar y reservar.
- En un molde grande añadir la mateca y la mantequilla.
- Amasarla con tu mano hasta que se suavicen y ya no se sientan grumos.
- Agregar la harina y revolver.
- Agregar el caldo de pollo poco a poco hasta que quede una masa con consistencia suave.
- Agregar sal poco a poco (1cucharada aproximadamente), no debe quedar muy salada pues el queso también tiene sal.
- Desherbar el queso.
- Añadirlo a la masa y mover.
- Sacar las hojas de maÃz del agua, no es necesario secarlas.
- Agregar dos a tres cucharadas de masa en el centro de la hoja. según el tamaño que desees de tamal.
- Añadirle espinacas.
- Cerrar el tamal un poco apretado.
- Presionar un poco el tamal y llevar la punta de la hoja hacia arriba.
- Poner agua en una vaporera y ponerle unas monedas para que hagan ruido mientras la olla tenga agua, poner la rejilla y enseguida acomodar los tamales parados y juntos para que no se caigan.
- Antes de ponerle la tapa a la olla persignar los tamales, (ésto es opcional pero en mi casa lo hacemos para que salgan bien cocidos y ricos los tamales). 😄
- Tapar muy bien para que no se escape el vapor y dejar cocinar por 2 horas aproximadamente hasta que los tamales se cuezan y estén esponjosos.
- Pasado el tiempo sacar un tamal y verificar que ya este cocido, apagar y servir.
